" Green Walnut " is a surprising and innovative lambic beer from Oud Beersel. Like for the Oude Kriek Oud Beersel, only real fruit is used to produce the Green Walnut. In the month of July the still green walnuts are picked in the Oud Beersel orchard and added to lambic that has matured in wooden wine barrels. The green walnuts draw on the lambic, giving off taste and aroma. The initial bitterness withdrawn from the nuts softens during the ripening of the walnut lambic. This creates a delicate balance between the slightly acidic of the lambic and the bitter of the green walnuts. The wooden wine barrels give the beer a subtle touch of red fruit. After a second fermentation in the bottle, this sparkling nut lambic from Oud Beersel becomes “"Green Walnut ", which is a good accompaniment to blue cheeses, dried hams and salads with nuts.
